Appearance: Before cooking, the grains are almost translucent and round. After cooking, they become a brilliant white with a glossy, attractive appearance.

High Starch Content: This type of rice has a high content of amylopectin starch, which gives it a naturally sticky texture when cooked.

Ideal Firmness: This stickiness allows the rice grains to adhere to each other to form sushi rolls (maki) or nigiri without falling apart or becoming mushy between chopsticks, while also maintaining their individual shape.
